Halibut Tacos, Avocado and Corn Salsa & Chipotle Cream Sauce

Halibut Fish Tacos

Anyone who knows me, knows my favorite food is Seafood.  I had been dying to make Fish Tacos for a long time!  Halibut is one of my favorite white fishes, Sea Bass would be my #1 favorite.  Once again my influence for these recipes are from The Food Network.  I served the tacos with spicy bean dip and instant Spanish rice.

Halibut Tacos:

  • 1/2 lb of Halibut cut into 1 inch strips
  • Panko bread crumbs
  • Flour
  • Egg
  • Salt and pepper
  • Corn tortillas
  • EVOO for frying

Avocado and Corn Salsa:

  • 1 small can of sweet corn
  • 2 ripe Avocados
  • 1 jalapeno, seeded and finely minced
  • 1/4 cup red onion finely chopped
  • 1/2 teaspoon minced garlic
  • 3 tbsps chopped cilantro
  • Juice of one lime

Chipotle Cream Sauce:

  • 2 1/2  cups Greek yogurt
  • 1/2 cup mayonnaise
  • 1/2 cup mustard
  • 2 large chipotle peppers
  • 1 tbsps of chipotle sauce
  • Pepper
  • 3 chopped scallions

Cilantro Lime Slaw:

  • 1/2 head savoy cabbage
  • 1/4 cup sliced red onion
  • 2 tbsps chopped cilantro
  • Drizzle of EVOO
  • Juice of 1 Lime
  • Salt and Pepper

Mix all ingredients for salsa.  Refrigerate.

Mis all ingredients for slaw.  Refrigerate.

Add all ingredients for cream sauce in food processor.  Process until smooth.  Refrigerate.

Dredge halibut strips in flour, coat in egg then coat in panko.

Fry in EVOO on medium heat until outside is golden brown.  Set aside on plate with paper towels as to absorb the extra oil.

Assemble into tacos, serve with beans and rice.

Add hot sauce as desired.  My favorite is Cholula.
